“Burnt” Basque cheesecake became a world dessert hit in 2019 – 2021!

From Michelin star kitchens to home ovens, this predecessor of New York’s cheesecake has earned worldwide adoration and popularity. It is cooked at a high temperature so that its top burns and cracks a little, turning into a burnt caramel color – though, it is almost impossible to overcook it.

The simplicity of the cooking technique added to its popularity among chefs. And besides, the taste is absolutely delicious – the dark brown crust adds a hint of bitterness to counter the sweet curd below.

The burnt Basque cheesecake (in Spanish – tarta de queso vasco) was created in 1990 by the chef  Santiago Rivera from the La Viña bar in San Sebastian (https://lavinarestaurante.com/), where there is still a queue for it and it must be ordered in advance.

The recipe is simple:

1 kg cream cheese, 500 ml cream, 5 large eggs, 350 g icing sugar, 1 tablespoon of plain flour – bake at 200 ° C for 50 minutes.

The Basque cheesecake wave has overtaken the world, and it is featured in key food publications from New York to Tokyo with restaurateurs continuing to incorporate it into menus or create restaurants based on it.

It is well known that in Spain food is a cult, a sacred rite, a pleasure and an occasion to meet. Catalonia, with its 53 Michelin-star restaurants, is a prime example. Seasonal gastronomic fairs are held here all year round: onion calçots, sea urchins, pumpkins, artichokes, honey, mushrooms and others.

In fact, these fairs are not just traditional fairs. They are big celebrations with singing and dancing, cookbook presentations, photography contests, product contests, performances for children and adults. And, of course, with special gastronomic offers for visitors.

So, from April 22 to May 10, a traditional asparagus fair is held in the city of Gavà. The event has been held here annually since 1932. It was originally an asparagus exhibition and competition where local farmers displayed their produce, and now
25 city restaurants prepare a special menu in which the main ingredient is locally grown asparagus.

So, if you’re still undecided about what to do this weekend, don’t miss the chance to try this extremely healthy local product at one of the town’s restaurants.
